I've had about 100 people ask me to post/blog more about the pink lemonade cupcakes I made for the boys birthday party. So, here it goes...

Just to start off, these are REALLY easy and very yummy.
Cupcakes:
Boxed white cake mix (any brand will do)
Make according to directions except for the water.
Instead of water use frozen pink lemonade concentrate (thawed)
(the mix I used called for 1 1/4 C water, so I used 1 C pink lemonade concentrate and 1/4 C water, just to thin it down a bit)
The batter will be pretty tart, but a lot of that flavor will bake out
Frosting:
This is a recipe I got from my sis-in-law Kristin (not sure where she got it from...). I just modified it a little.
1/2 cup butter, softened
2 3/4 cups powdered sugar
1-7 ounce jar marshmallow creme
1 teaspoon vanilla
2 tablespoons lemon juice (the original recipe calls for milk here)
Combine butter and mallow creme. Beat on medium until smooth. Gradually beat in powdered sugar. Beat in vanilla and lemon juice.
Next time I'm going to use more of the pink lemonade concentrate instead of the lemon juice...
To finish them off I sliced up a couple lemons and dredged the slices in granulated sugar and placed them on top. They were even yummy to eat (with out the rind) because of all the sugar.
